White Tea Lychee Daybreak

A chilled drink with lychee, raspberry.

White Tea Lychee Daybreak

Lychee and white tea both have delicate floral notes, while raspberry supplies a useful tart contrast. The berries also give the glass a soft pink tint. Use a light white-tea brew and let it cool completely before mixing. Lychee juice is easier to balance than heavy canned-fruit syrup. A few mashed raspberries make the drink taste fresher, though you may want to strain out the seeds. It's a fragrant iced tea with a gentle finish and some caffeine.

Ingredients

  • 1 tea bag White tea
  • 6 oz Water
  • 2 oz Lychee juice
  • 1/4 cup Raspberries

Make it

  1. Brew the tea in the measured water, using the temperature and steeping time on its packet. Remove the tea bag.
  2. Cool the tea in a heatproof container, then chill for about 30 minutes.
  3. Mash any soft fruit in a separate glass. Lightly bruise herbs or ginger; add these and the listed juices or spices to the cooled tea.
  4. Stir well and taste. Remove ginger or herb sprigs when their flavor suits you. Strain if you prefer a smoother drink, then serve chilled.
