Watermelon Redcurrant Weekend

A sparkling drink with watermelon, redcurrant, lime.

Watermelon Redcurrant Weekend

Watermelon makes a gentle, juicy base, and redcurrants give it a tartness that lemon alone doesn't quite provide. The lime ties the two fruits together. Mash the melon separately so it releases plenty of juice, then press and strain the currants if you prefer a smoother texture. The color should be a soft red, with a refreshing berry finish. This is a good use for very ripe watermelon that might be too soft for neat slices.

Ingredients

  • 5 oz Sparkling water
  • 1/2 cup Seedless watermelon cubes
  • 2 tbsp Redcurrants, stalks removed
  • 1/4 oz Lime juice

Make it

  1. Prepare the fruit and herbs as listed. Mash soft fruit to release juice; lightly press herbs or thin ginger slices without shredding them.
  2. Add the still juices and stir. Strain out seeds, skins or herb pieces if you prefer a smoother texture.
  3. Pour in the chilled sparkling water slowly and stir once. Serve immediately, with ice if you like.

Benefits

Lime ยท a little vitamin C

Beside watermelon and redcurrant, lime offers a little vitamin C, used by your body for normal immune function, as well as a lively citrus tang.

A sparkling setting for redcurrant

Pairing redcurrant with watermelon and lime puts a bright, tart berry note into a fizzy glass, with bubbles making the texture part of the pleasure.
