Tomato Celery Garden Breakfast
A chilled drink with tomato, celery, lemon, parsley.

This is a savory breakfast drink with the familiar combination of tomato and celery, lifted by lemon and fresh parsley. It doesn't need hot sauce to have character. Check whether your tomato juice is already salted before adding any seasoning at the table. A good stir and plenty of chilling help the flavors settle together. Serve it in a modest glass alongside breakfast; the vegetable flavor is fairly full, with a fresh herbal finish rather than sweetness.
Ingredients
- 2 oz Cold water
- 4 oz Tomato juice
- 1 1/2 oz Celery juice
- 1/4 oz Lemon juice
- 1 tsp Flat-leaf parsley, roughly chopped
Make it
- Prepare the fruit and herbs as listed. Mash soft fruit to release juice; lightly press herbs or thin ginger slices without shredding them.
- Add the still juices and stir. Strain out seeds, skins or herb pieces if you prefer a smoother texture.
- Stir in the cold water. Let fresh fruit, herbs or ginger infuse for 5 minutes, then remove the ginger or herb sprigs when the flavor suits you. Serve chilled.
Benefits
Tomato ยท a little vitamin C
Beside celery, lemon, and parsley, tomato offers a little vitamin C, used by your body for normal immune function, as well as a savory, juicy base.
A different side of celery
There is a fresh, savory edge from the measured celery in the tomato, lemon, and parsley mixture, giving that ingredient a place without drowning out the other flavors.
