Rose Pistachio Velvet Spoon
A lightly thickened rose milk with a pistachio topping, inspired by sahlab.

The pleasure here is the texture: just thick enough to coat a spoon, with a little crunch from pistachios. Rose water adds fragrance rather than a sugary rose flavor, and a few drops go a long way. Whisking the starch into cold milk first prevents lumps. This is a simple sahlab-inspired cup made with cornstarch rather than orchid salep. It suits a small serving, especially when you want something richer than a fruit infusion.
Ingredients
- 8 oz Unsweetened oat milk
- 1 1/2 tsp Cornstarch
- 1/16 tsp Food-grade rose water
- 1 tsp Finely chopped unsalted pistachios
- 1 tsp Sugar
Make it
- Whisk the cornstarch and sugar into the cold milk until smooth.
- Heat gently in a small saucepan, whisking continuously until it bubbles softly and thickens, about 4–6 minutes.
- Remove from the heat, stir in the rose water and pour into a heatproof cup. Sprinkle with pistachios.
Benefits
Corn with a useful milk choice
A calcium-fortified oat milk adds a bone-and-teeth nutrient to the corn pairing. Check the carton when choosing your base; fortification varies.
Corn · a reason to linger
Warm corn with oat milk, rose water, and pistachios and you get a lightly thickened texture in a cup made for small, comfortably warm sips.
Contains pistachios. Check the milk label for allergens.
