Preserved Lemon Olive Table

A small, savory citrus spritz with saltiness from preserved lemon and olive brine.

Preserved Lemon Olive Table

Preserved lemon gives this spritz a rounded citrus flavor and a clear salty edge, while a little olive brine makes the finish deliberately savory. Orange juice provides just enough sweetness to soften the combination. Rinsing and finely chopping the peel matter, as does straining if you want a clean glass. This is a small aperitif-style drink for someone who enjoys olives and salty snacks. It won't appeal like a sweet mocktail, but it has a distinctive character of its own.

Ingredients

  • 1/4 tsp Preserved lemon peel, rinsed and very finely minced
  • 1/2 tsp Green olive brine
  • 1 oz Orange juice
  • 2 oz Cold water
  • 4 oz Sparkling water, chilled

Make it

  1. Rinse the preserved lemon peel well and remove any pulp or seeds. Mince very finely.
  2. Stir the peel, olive brine, orange juice and cold water together. Strain through a fine sieve for a cleaner texture.
  3. Top with chilled sparkling water and stir gently. Serve immediately.

Benefits

Orange ยท a little vitamin C

Orange contributes a little vitamin C for collagen formation for healthy skin; lemon peel brings a salty citrus accent in this recipe.

Lemon peel with a little lift

The lemon peel brings a salty citrus accent, alongside olive brine and orange; the chilled carbonated mixer adds a crisp texture to that pairing.

Preserved lemon and olive brine are salty; no extra salt is needed. Check labels if avoiding trace alcohol or particular ingredients.
