Pineapple Sesame Small Surprise
Pineapple & Black Sesame Foamed Sour. A different way to make the moment yours.

Black sesame gives pineapple a toasted, slightly savory depth that makes this small sour feel genuinely different from a tropical soda. Lime adds a sharper finish, while aquafaba produces a soft foam. The sesame paste must be stirred in smoothly before shaking so it doesn't sit in oily streaks. This is a little kitchen experiment with a rounded, nutty flavor under the fruit. Serve it promptly in a small glass, with the foam as part of the texture rather than a decorative topping.
Ingredients
- 1 oz Cold water
- 2 oz Pineapple juice
- 1 tsp Unsweetened black sesame paste
- 1/4 oz Lime juice
- 1/2 oz Aquafaba from a freshly opened can of chickpeas
Make it
- Mash any soft fruit with the water and still juices, then strain out skins or seeds. Whisk in any powders or seed butter until smooth.
- Put the mixture and aquafaba in a clean cocktail shaker. Close securely and shake without ice for 15 seconds.
- Add a few ice cubes, shake again for 10 seconds and strain into a chilled small glass. Serve immediately. Never shake carbonated liquid in a closed shaker.
Benefits
Lime ยท a little vitamin C
Using lime with apple juice, black sesame paste, and aquafaba from a freshly opened can of chickpeas brings vitamin C for absorbing iron from plant foods, along with a lively citrus tang.
Black sesame paste, apple juice, and lime
The black sesame paste contributes a toasted, slightly bitter nuttiness to apple juice, lime, and aquafaba from a freshly opened can of chickpeas, giving you a specific flavor combination to reach for instead of a default pour.
Aquafaba is chickpea liquid, not egg white. Check suitability for legume allergies. Use a freshly opened can and serve promptly.
