Pineapple Fennel Morning Market

A chilled drink with pineapple, fennel, lime.

Pineapple Fennel Morning Market

Pineapple can be quite assertive, but fennel gives it an unexpected savory note instead of adding another sweet fruit. Slice the fennel very finely, press it briefly in the lime juice, and strain before serving if you want a clean texture. A little of its anise flavor is the point; it shouldn't dominate. The result is sharp, fragrant, and slightly unusual, with enough pineapple sweetness to make the combination approachable on its first outing.

Ingredients

  • 2 oz Cold water
  • 2 oz Pineapple juice
  • 1 tbsp Fennel bulb, very thinly shaved
  • 1/4 oz Lime juice

Make it

  1. Prepare the fruit and herbs as listed. Mash soft fruit to release juice; lightly press herbs or thin ginger slices without shredding them.
  2. Add the still juices and stir. Strain out seeds, skins or herb pieces if you prefer a smoother texture.
  3. Stir in the cold water. Let fresh fruit, herbs or ginger infuse for 5 minutes, then remove the ginger or herb sprigs when the flavor suits you. Serve chilled.

Benefits

Lime · a little vitamin C

Lime brings some vitamin C to the mix—a nutrient involved in collagen formation for healthy skin, alongside a familiar orchard flavor from apple juice.

Apple juice · a flavor worth noticing

Using apple juice beside fennel and lime gives the glass a familiar orchard flavor, creating its own flavor without needing carbonation or an alcoholic pour.
