Lychee Raspberry Window Box
A sparkling drink with lychee, raspberry, lemon.

Lychee's floral sweetness can become a little perfumed on its own. Raspberry adds tartness and a more familiar berry flavor, while lemon keeps the combination clear and crisp. Use lychee juice rather than syrup from a can of fruit unless you adjust the sweetness substantially. Press the raspberries first and strain for a smoother glass. The finished drink has a delicate pink color and an aromatic finish, with enough acidity to keep it from feeling sugary.
Ingredients
- 5 oz Sparkling water
- 2 oz Lychee juice
- 1/4 cup Raspberries
- 1/4 oz Lemon juice
Make it
- Prepare the fruit and herbs as listed. Mash soft fruit to release juice; lightly press herbs or thin ginger slices without shredding them.
- Add the still juices and stir. Strain out seeds, skins or herb pieces if you prefer a smoother texture.
- Pour in the chilled sparkling water slowly and stir once. Serve immediately, with ice if you like.
