Lemon Leisure Collins
Rosemary Lemon Collins. A simple recipe for a moment that feels like yours.

Lemon and rosemary make a crisp, herbal drink that stays firmly on the unsweetened side. The lemon is direct; rosemary adds the more interesting detail when you lift the glass. Bruise a small sprig lightly and let it sit with the juice before adding sparkling water. If you prefer sweeter drinks, be aware that this won’t behave like lemonade. Its appeal is the clean citrus flavor with a little woodland aroma around it.
Ingredients
- 5 oz Sparkling water
- 1/2 oz Lemon juice
- 1 sprig Rosemary
Make it
- Add any fruit, herbs, spices, or syrup to a glass and gently press to release flavor.
- Add the still liquids and ice. Stir to combine.
- Pour in the sparkling ingredient slowly and stir once. Serve immediately.

Make room for rosemary
Rosemary gives the lemon a piney herbal note—an aromatic pairing to serve freshly mixed, while the bubbles are lively.
