Ginger Last Light
Ginger Honey Cup. A simple recipe for your evening wind-down.

Honey gives ginger tea a rounder sweetness, while fresh ginger adds a little bite beyond the tea itself. It’s an uncomplicated cup, but the balance can change quite a bit as the ginger sits. Brew first, then let the fresh pieces infuse briefly before adding honey to taste. You should be able to enjoy the warmth without needing sweetness to hide it. A little patience is more useful than doubling the ginger immediately.
Ingredients
- 6 oz Hot water
- 1 tea bag Ginger herbal tea
- 2 slice Fresh ginger
- 1/2 tsp Honey (optional)
Make it
- Add the tea or fruit and spices to a heatproof mug or small saucepan.
- Pour in the hot water. Steep tea for the time on its packet, or gently simmer fruit for 3–5 minutes.
