Dragon Fruit Lime Daybreak
A sparkling drink with dragon fruit, lime, mint.

Dragon fruit is much subtler than its bright appearance suggests, so this drink stays light and gently fruity. Lime gives it direction, while a little mint adds a cool aroma. Red-fleshed fruit makes a striking pink glass; white-fleshed fruit tastes good too, just without the dramatic color. Mash the fruit before adding the sparkling water and keep stirring to a minimum afterward. Expect a delicate refresher with tiny seeds, rather than a bold, sweet fruit soda.
Ingredients
- 5 oz Sparkling water
- 1/2 cup Dragon fruit flesh
- 1/4 oz Lime juice
- 4 leaf Mint leaves
Make it
- Prepare the fruit and herbs as listed. Mash soft fruit to release juice; lightly press herbs or thin ginger slices without shredding them.
- Add the still juices and stir. Strain out seeds, skins or herb pieces if you prefer a smoother texture.
- Pour in the chilled sparkling water slowly and stir once. Serve immediately, with ice if you like.
